City University of New York (I attended the Baruch College branch) provided a really good set of teachers at a really affordable price. I and a lot of other people supporting themselves were able to put myself through college at night. The school is famous for its business program (esp. the accounting major), but I found exceptional teachers in all fields, from statistics to literature and music.
This college targets older working professionals and international students - so there's a decent age and cultural mix - which really helps the diversity of discussions.
When P.T. Barnum donated money to Tufts University, he did so on the condition that the school's mascot be named after his beloved elephant. The Tufts University mascot has been the "Jumbos" ever since.
