I attended Lamar University as a graduate student and earned a master's in biology. I can't speak for other majors, but the biology graduate program really is lacking since there are not that many biology professors so it is impossible to specialize in any one subject. I ended up with more of a general degree. Also, all of the classes I took were really senior level undergraduate classes with perhaps just a few extra minor requirements added for the graduate students. There really was no challenge.
I so far haven't had much of a note worthy experience with Lamar. Most teachers I have had, either don't speak very good English, or they are just plain rude. The students around seem to lack a lot also. The acceptance standards aren't really that high, so basically if you will pay the tuition they will let you go. Needless to say that leaves a lot of idiots running around. On a positive note, the campus seems to be pretty clean, and there are a lot of really nice people also, besides the idiots.
